Have you considered applying for consultancies at the UN?
I wrote about this in March (see the blog post HERE), and later received a tip about the "IC Hub", a network and resources for "impact consultants", i.e., independent contractors in the UN and other humanitarian and development organizations.
I'd say it's mainly for people who are looking to make a career out of doing consulting work, but there are definitely lots of useful insights, even if consulting is only one of the ways you're considering in order to join the UN.
And remember - you don't need to be a senior expert to be a consultant. It's a type of contract, and there are jobs to be done at all levels.
There are plenty of ways to connect with the IC Hub; the IC-hub website and the IC Podcast are two easy places to start.
